  • 1 cup couscous, 100% whole wheat
  • 1 1/2 cup boiling water
  • 1 cup of zucchini
    cut into 1/4 inch pieces
  • 1 medium red pepper, bell
    cut into 1/4 inch pieces
  • 1/2 cup red onions
    finely chopped
  • 3/4 teaspoon cumin (ground)
  • 1/2 teaspoon pepper (black ground)
  • 1/2 cup Italian dressing, reduced in fat
  • Fresh parsley for garnish (optional)


* Boiling couscous – Instant couscous can simply be made by pouring boiling water over it, while traditional couscous requires longer cooking.

* When the couscous is cooked, fluff with a fork.

* Stir in the zucchini, bell pepper, onion, cumin and black pepper.

* Pour the Italian dressing over the mixture and toss to combine.

* Cover and refrigerate about eight hours before serving.
